From Our Table to Yours - Best Thanksgiving Smoked Turkey


1-Butterball Turkey (with giblets and parts if making dressing)

1-Lb jar of Ole Man’s Spice Rub & Seasoning blend (Original, Mediterranean, or Special Blend-No Salt, No Sugar)

1-orange, 1-apple, 1-lemon/lime, 2-celery stalks, 1-bell pepper, 1-jalapeno, 1-onion, 6-cloves garlic, 4-twiggs of fresh oregano & rosemary

2-bags of pecan or hickory chips or chunks

1-botttle of liquid smoke is using oven (only use one teaspoon)

Thaw favorite turkey to size (we use butterball)

Wash thoroughly and let sit in water bath with 1 cup of olive oil; let stand for 15 minutes

Dry turkey completely and sprinkle cavity with Ole Man’s Spice Rub & Seasoning blend (Original, Mediterranean, or Special Blend-No Salt, No Sugar)

Stuff both cavities with lemon/lime, celery, sweet bell peppers, jalapeno pepper, apples, oranges, garlic, onion, fresh oregano, and fresh rosemary

Rub turkey completely with Ole Man’s Spice Rub & Seasoning blend (Original, Mediterranean, or Special Blend-No Salt, No Sugar)

Place turkey in large zip lock bag or saran wrap and place in refrigerator overnight

Next morning place on smoker or in oven and cook to temperature/time on packaging

When cooking our turkey on smoker we start fire with oak and cook with pecan adding a hickory log occasionally

When cooking in oven you can use a teaspoon of liquid smoke to a 2 cups of water and put in bottom of cooking pan with turkey

We never cook dressing in cavity for safety. Look for our Momma’s dressing recipes. This recipe is also great for Duck, Pheasant, Quail, Geese, and Cornish Hens

Save your turkey giblet and parts for our dressing. Our seasoning only has 3% Sea Salt by volume!!
