Thelma’s favorite Oyster Dressing with Ole Man’s Spice Rub & Seasoning Blend

1-bag of Turkey giblets, parts and trimmings

2-bags of non-seasoned stuffing mix

2-boxes instant Jiffy cornbread mix or your Momma’s homemade cornbread recipes for one pan

2-jars of fresh or pasteurized oysters

2-boxes of vegetable stock


6-stalks of celery

2-bell pepper

½-Poblano Chile

1 or 2-Serano Chilies



2-cloves of garlics

4-Tbsp of Olive Oil

1-stick butter (unsalted)

4-twigs each of fresh oregano, thyme, rosemary

3-bay leaves

1-4.4 oz. bottle of Ole Man’s Spice Rub & Seasoning blend (Original, Mediterranean, or Special Blend-No Salt, No Sugar)

Take Turkey parts and put in Large Pot with 2-boxes of vegetable stock, 3 celery stalks (quartered), 1 bell pepper (quartered), 1 onion (quartered), 1 clove of garlic (quartered), 1 serrano chilies, 2 twigs each of fresh oregano, thyme, rosemary, 3 bay leaves.

Boil contents until liquid mixture boils down half way. Let simmer!

Take two Jiffy cornbread mix and following directions to make pan of cornbread. Let cornbread cool when done.

Chopped 1 onion, 1 clove of garlic, 1 serrano chili, 2 twigs of oregano, thyme, rosemary (take of leaves and chop), chop 3 stalks of celery, chop 1 bell pepper, chop ½ Poblano chili

In bowl mix the cornbread, two bags of unseasoned bread crumbs, add chopped ingredients

Add 4 tablespoons of olive oil and 1 stick of butter to cast iron of heavy large skillet with 2 chopped scallions. Rinse oysters and add to hot skillet. Give oysters approximately 5 minutes on each side. Remove oysters, let cool and chop. Add hot oil butter mixture to dry ingredients. Add chopped oysters. Add 6 eggs and stir rapidly by hand.

Pour hot & simmering turkey stock to bowl and mixture stir until you get pancake batter consistency. If low on stock add water and heat on high to produce additional.

Lastly add 2 oz. of your favorite blend of Ole Man’s Spice Rub & Seasoning blend (Original, Mediterranean, or Special Blend-No Salt, No Sugar)

Bake mixture one hour in oven at 345 degrees or until mixture is firm. Last 10 minutes on top rack to brown.
